Cleaning comes before sorting: a destoner and classifier take out the stones, sand, straw and dust first, so the colour sorter only has to deal with the subtle defects. Skip cleaning and the sorter pays for it: every stone and mud ball fires an ejector that throws out good grain along with it, dust coats the camera windows and blunts accuracy, and the stones that slip through reach the customer as grit in their dal or flour — the complaint that costs a food brand its buyers. A destoner separates stones by weight (density), which catches same-size stones that a sieve or colour sorter can miss.
